Stirring a decoction. I like how the swirls remind me of a painting from Van Gogh.

When you say "I do a one gallon decoction", what does that mean -- is this just one gallon of runoff, or do you scoop out some grain and wort to reach the one gallon mark?

Hunington-

A decoction is actually drawn from the mash itself. As such, you can use a decoction to raise the temperature of the mash from one step to the next. When I first started doing a single decoction, I would use it to go from the protein rest to the sacc rest. Now I use it to go from the sacc rest to the mash-out (since the general consensus is you don't need to do a protein rest). I try to keep my decoction as thick as possible, so it's almost like boiling oatmeal.
